The Domaine is located in the northernmost region of Chablis, almost bordering the Champagne region, and is operated by by the Gautheron family. Currently the winery is run by 5th generation wine maker Alain Gautheron assisted by his son Cyril. Between them they cultivate almost 30 hectares of Chardonnay vines grown on calcareous and marl soils situated on east facing slopes. Their vines are spread over 19 plots in some of the best municipalities in the region and lutte raisonee (semi-organic agriculture) is employed. This is a delightfully crisp and refreshing Chablis with a lively acidity that makes for an excellent food wine.
A clear light golden in colour, flecked through with emerald green.Look for scents of lemon, hazelnuts and ginger. Fresh and mineral on the palate with flavours of green fruits and pineapple. The classic accompaniment to oysters or chicken with crayfish. Try also with trout stuffed with spinach and shallots.
