Chateau de Jau is situated at Collioure, a picturesque fishing village on the Mediterranean coast, part of France's southern most AOC. The estate is owned by the forward-thinking and ambitious Daure family who acquired the estate in 1974. In addition to the wines the estate also boasts an excellent restaurant and contemporary arts gallery. Well worth a visit! This light and fresh dessert wine is made from 100% Muscat a Petit Grains grown on schistous terrain in the heart of Rivesaltes and the grapes are harvested very early in the morning to retain their freshness. After a short maceration and mutage (the addition of grape spirit that arrests fermentation but retains the wine's sweetness) the wine is quickly bottled in order that all the citrus flavours may be captured.
A light lemon-yellow in colour. Heady scents of lemon and limes with a hint of menthol. Very fresh on the palate with further tropical fruit flavours of apricot and peach. Serve lightly chilled with lemon tart, foie gras or a wedge of salty Roquefort cheese.
