The 40-hectare Chateau Saint Cyrgues is based in the village of Saint-Gilles in the Costieres de Nimes appellation and is run along organic lines by Guy de Mercurio. The region received full appellation status in 1986 and although notionally in the eastern Languedoc it shares the same terroir as the southern Rhone, i.e. galet stones and sandstone. 'Saint Cirice' is the estate's entry level red and is a warming blend of Merlot, Syrah and Grenache Noir. Spicy and rich, this makes for a warming Sunday lunch red.

Cherry-red in colour, on the nose look for aromas of cherries and raspberries. Richly balanced on the palate, full of red berry flavours with a hint of vanilla and wild herbs. Excellent tannins and a long finish make this an ideal wine to serve with wild mushroom risotto, gardiane ( a local stew made from smoked bacon, black olives and garlic) or a chunk of tomme cheese.
