The micro negoce house of Vini Viti Vinci was founded by Nicolas Vauthier in 2009 and is based at Avallon in northern Burgundy. A passionate natural wine fan, Nicolas originally studied oenology in the USA and Burgundy and prior to setting up his wine business, opened the legendary natural wine bar, 'Aux Criers de Vins', in Troyes. Today he works in the lesser known appellations of northern Burgundy including Aligote, Chitry and Pineuil, and all his wines are made from organically grown Chardonnay and Pinot Noir grapes. 'Breau' is fermented in oak vats and contains no added sulphites. Fresh and rich with an expressive nose, this makes for an excellent food wine.
A limpid yellow-green in colour. Aromas of citrus and orchard fruits. On the palate, lively and crisp with a hint of oily viscosity. Flavours of ripe apples with some waxy hints and a touch of green herbs. The acidity is bright and the finish long and clean. Drink young with a blanquette de veau, snails in garlic or Crottin de Chavignol cheese.
