The 25-hectare Tenuta Cavallotto is situated on the edge of the town of Castiglione Falletto in the heart of Barolo and on the crest of the Bricco Boschis hill. The estate has been in the hands of the Cavallotto family for five generations and today is managed by Laura, Giuseppe and Alfio Cavallotto and everything is carried out according to organic principles. Of the 25 hectares, just over half is given over to the old Nebbiolo vines for the production of the estate's fabled Barolos. This stunning example comes from 50 year-old vines situated in the Vigne Colle Sud-Ovest and Punta Marcello vineyards and spends almost 3 and a half years in Slovenian oak casks before release. With its captivating aromas of truffles and dried plums and elegant tannins, this makes for a superb food wine.
A light ruby red in the glass. Vinous aromas of cherry, plum and redcurrant with hints of leather and tobacco. Dense, sweet and juicy on the palate with a brisk acidity and firm, dusty tannins leading to a long finish. Great with a simply roasted goose, calves liver with polenta, bacon and balsamic onions or pan fried pigeon breast with wild mushrooms in a red wine jus.
