The Sokol Blosser estate was founded by Bill and Susan Sokol Blosser in 1971 in the Dundee Hills of Oregon, some 30 miles south west of Portland on America's west coast. They spent the following 6 years renovating and improving the vineyards and cellar and their first vintage was released in 1977. The 85 hectares of vineyards are farmed organically and the insect population is kept in check by a resident flock of bluebirds. The underground barrel cellar became the first winery in the country to earn the prestigious 'Leadership in Energy and Environmental Design' certification. Although Pinot Noir is the main grape grown, plantings of Pinot Gris, Muller-Thurgau, Syrah and Zinfandel have also been made. The Evolution Sparkling is a blend of Muller-Thurgau, Semillon and Riesling and is made in the methode traditionelle.
A light pale golden in colour with excellent bubble formation. Aromatics of apricot, green apple, and pear with hints of white peach. On the palate, dry, creamy and smooth with citrus notes leading to a refreshing finish. Drink with Serrano ham, spicy calamari or asparagus and smoked salmon.
