Sao del Coster is situated in the town of Gratallops in the Priorat region of Catalonia. The business was created in 2004 by a group of Swiss friends who were passionate about Priorat and its wines. The estate is currently run by Joel Chevallaz and Michel Grupper and everything is carried out strictly according to biodynamic principles. There are 2 plots - Planassos and La Pujada, both located in Gratallops - from which a range of superb reds are made from old vine Garnacha, Carignan and Cabernet Sauvignon among others. Pim Pam Poom is 100% Garnacha and is raised and aged in stainless steel tanks. This is a meaty red which truly reflects it surroundings.
A dark cherry-red in colour. On the nose, typically complex scents of plums, black cherry and of the terruno - the granitic soils in which the vines grow. In the mouth, medium-bodied and balanced leading to a spicy finish. Great with rabbit, blood sausage with chickpeas and spinach or monkfish stew with peppers and clams.
