Sao del Coster is situated in the town of Gratallops in the Priorat region of Catalonia. The business was created in 2004 by a group of Swiss friends passionate about Priorat and its wines. Joel Chevallaz and Michel Grupper currently run the winery strictly according to biodynamic principles. There are 2 plots - Planassos and La Pujada, both located in Gratallops -from which 4 wines are produced using native varieties from old vines including Garnacha and Carignan, alongside more international grape varieties including Merlot and Cabernet Sauvignon. 'S' is a blend of Merlot, Garnacha, Syrah and Cabernet Sauvignon from 60 year old vines grown on granite soils in the Planassos vineyard. Only naturally occurring yeasts are used and the wine is aged for 1 year in stainless steel tanks. It is unfiltered. A minerally and meaty red which truly reflects its surroundings.
A dark cherry-red in colour. On the nose, typically complex scents of the 'terruño - the afore-mentioned granitic soil that imparts the abundant mineral notes to the wine. Look out for further aromas of plums and black cherry. In the mouth, medium-bodied and balanced leading to a lingering, spicy finish. A really well structured wine that would pair well with rabbit with noodles, Catalan blood sausage with chickpeas and spinach and or monkfish stew with clams and peppers.
