Ronco della Betulle nestles in the hilly eastern part of Friuli in the far north east of Italy, in a subzone called Rosazzo. The estate comprises of 17 hectares of which 10 are currently under vine. The hills of Rosazzo benefit from a special microclimate determined by several geographical factors: its proximity to the sea and its altitude. Ivana Adami has a purist wine-making philosophy: that the essential character of the wine derives from the sun, soil and the area and that typicity should be respected and preserved. This particular Sauvignon is grown on marl and sandstone and the grapes are handpicked. The wine is is left on the lees with occasional battonage for four months and aged for a further 6 months in bottle before release.

A pale straw in the glass. Aromas of tomato leaves, green pepper and elderflower. On the palate, elegant and fresh with excellent length leading to further green fruit and vegetal notes. The finish is short and refreshing. Try with notoriously hard-to-match egg dishes. Otherwise, great with a prawn and porcini risotto or frico (parmesan crisps) with asparagus tips and quail's eggs.
