Located in the beautiful hill-top village of Montefalco in Umbria the 15-hectare Paolo Bea Winery is one of the finest in Italy. Although the Bea family have been in the region since the 15th century, the winery was only founded in 1980 and Paulo remains committed to retaining old fashioned techniques and making wines that are a true reflection of the surrounding terroir. Staunchly artisanal, with much of the work done by hand without the aid of modern technology, the wines are raised without pesticides or herbicides and are robust and complex. Paulo's flagship red is from hand-harvested grapes and the yields are low. The wine is aged for 12 months in steel tanks before further ageing in Slavonian oak barrels for 2 years. Unfiltered, the slight sediment only serves to enhance the rustic nature of this wine.

A dark purple-ruby in colour. Scents of bitter herbs, black cherries and liquorice. On the palate, sweet and creamy with flavours of dark red berries. A complex and intense red with well-balanced tannins leading to a lenghty finish. Try with artichoke and truffle flan, palombacci alla ghiotta (roast pigeon with juniper berries and chicken livers) or a chunk of local Pecorino cheese.
