The estate of Monte Dall'Ora is owned by Alessandra and Carlo Venturini and is located at Castellroto, in the hills outside Verona. The vineyards are planted on limestone soil and form a natural amphitheatre facing southeast towards the city. Various parcels of the vineyards are planted on ancient dry stone terraces called marogna in which fossils and petrified shells can be found and which allow for excellent drainage and deep penetration of the vines. The Venturinis are firm adherents to biodynamic principles and encourage the growth of biodiversity by planting herbs such as rosemary and lavender in the summer to attract bees and by sowing cereals in the winter, the roots of which aerate the soil. Amarone 'Stropa' is made from a blend of 40% Corvina, 20% Corvinone, 30% Rondinella and 10% Molinara. The wine is aged in oak for four years before bottling. It then rests in bottle for a further 12 months before release.

An deep violet in colour. Aromas of dark plum, red cherry and baking spices. On the palate, full-bodied and opulent with notes of liquorice, chocolate and dark berries. The acidity is mouth-watering and the tannins silky and soft. The finish is long and concentrated. A sensual wine that will keep for a further 7-10 years. Amarone is best drunk after a meal with chunks of Parmagiano Reggiano to which should be added a few drops of balsamico traditionale. Otherwise try with a rabbit stew with olives and rosemary or spezzatino di vitello, a veal stew with olives, capers and tomatoes.
