
Patrick Miolane is based in the village of Saint-Aubin and assumed control of the estate from his father in 1998. In addition to vines in Saint-Aubin he also has small parcels in Puligny and Chassagne-Montrachet. His wines are uniformly excellent and display real characteristics of the terroir from which they come. The whites are restrained and mineral; the reds pure and well balanced. This particular Puligny is from a parcel of 60 year-old vines. The grapes are hand-harvested. Following fermentation, half the juice is put into stainless steel tanks while the other half spends time in oak barrels making this a characterful and generous white wine. A perfect accompaniment to fish or ripe cheeses.
A delicate straw-yellow in colour. Notes of candied apples and pears on the nose. Generous and ample on the palate with superb acidity leading to a lengthy and rich finish. try with ballotine of salmon wrapped in savoy cabbage, served with beurre blanc, braised lobster tails served with spring vegetables or a Caesar salad.
