Originally trained as a professional pianist, Nicolas turned his back on the world of music to become a winemaker in 1994. In 1998 he acquired 28ha of vines in Anjou, and after 3 years of analysis and observation he disposed of 23ha to concentrate on the remaining walled vineyard of 5ha. 2 additional hectares were quickly added and his initial vintage was released in 2002. His marriage in 2005 to the renowned natural wine author and pioneer, Sylvie Augereau, strengthened his resolve to make wines with minimal intervention, and his first of an acclaimed series of natural wines was made in 2007. Enlevement Demande is 100% Cabernet Franc and is unoaked. Fresh and expressive, this would benefit from gentle chilling.
A deep ruby red in colour. On the nose, notes of black cherries and summer red fruits. In the mouth, savoury and fresh with a lively acidity leading to a spicy finish with herbal notes. Great with roast pheasant, grilled aubergines with yogurt and harissa or a pizza margherita.
