Domaine Jean Javillier is situated in the village of Meursault in Burgundy's Cote d'Or. There are 7.5 hectares in all (4ha red, 3ha white and .5ha Aligoté) and the estate has been registered as organic since 1972. Today the estate is run by Alain Javillier who inherited the estate form his father, Jean - the driving force behind the estate's conversion to organics. Yields are eye-wateringly low and fermentation is short (at an average of 12 days). Only naturally occurring yeasts are used and the wines are aged in old oak barrels for 12-14 months. The resulting wines are round and ripe with well balanced tannins and a juicy acidity.

A dark cherry-red in colour. Scents of blackberry, cherry and prune. On the palate, round and ripe with hints of chocolate and leather. The tannins are discreet and the finish slightly spicy and lingering. Great with coq au vin, veal chops with Dijon mustard or sautéed Jerusalem artichokes with walnuts.
