Domaine du Cros is situated in the little-known AOC of Marcillac in southwest France, to the north of Aveyron, and is run by 3rd generation winemaker Philippe Teuiler. Marcillac achieved its AOC in 1990 and today there are just 70 producers spread over 150 hectares, growing mainly Fer Servadou grapes, known locally as Mansois. Other grapes allowed include Merlot, Gamay and Cabernet Sauvignon. Philippe farms 25 hectares and has recently constructed a winery at the top of the Haut de Coteau above the vineyards setting it into the hillside so that gravity does the work of moving the juice from the press to the steel tanks below. 'Lo Sang de Pais' ('blood of the soil') is a very distinctive red made from 100% Mansois. With its bright acidity and fine-grained tannins, this is as versatile a food wine as some of the finest Beaujolais crus.

A dark purple-red in colour. On the nose scents of brambly red fruits with balsamic notes. The palate is mineral in texture ('Fer' translates into 'iron', after all) with further spicy red fruits flavours leading to a fresh and clean finish. Great with duck confit with parsley potatoes, milk-fed lamb or the local speciality, tripe with aligot (mashed potato and cheese).
