This strictly biodynamic estate is run by Ghislaine and Jean-Hugues Goisot who believe strongly in the primacy of terroir and harvest as late as possible to maximise the potential of the grapes. The domaine has existed since the 15th century and Jean-Hugues began working with the vines at at the age of 16. The estate has been fully organic since 1993; no chemicals are employed, only natural yeasts are used during fermentation and there are no added sulphites. Saint-Bris is the only white wine appellation in Burgundy that permits Sauvignon Blanc in the wines and was only granted AOC status in 2003. This award-winning white is a stunning example of the wines of Saint-Bris from a 4.4 hectare north-facing vineyard planted with 20 year old vines and shares many attributes with top bottlings of Sancerre from terres blanches soils. 

A light golden in colour. On the nose aromas of tart green apples, celery and lime. A pleasant spritz on the palate leads to flavours of lime zest, pear and gooseberries. The finish is short yet concentrated with penty of minerality. Classic Sauvignon! Drink with trout poached in vermouth, moules-marinieres or a taleggio cheese tart.
