This strictly biodynamic estate is run by Ghislaine and Jean-Hugues Goisot who believe strongly in in the primacy of terroir, and harvest late as possible to maximise the potential of the grapes. The domaine has existed since the 15th century and Jean-Hugues started working with the vines at the age of 16. The estate has been fully organic since 1993; no chemicals are employed and only wild or natural yeasts are used. This 100% Aligote is from various 6.3 hectares of vines located on north facing slopes. The average age of the vines is 20 years and the grapes are hand picked and fermented in temperature controlled stainless steel.
A bright pale lemon in colour. On the nose hints of melon, citrus fruit and spice. On the palate, racy and intense with a surprising depth and concentration. The finish is short and the acidity balanced. Great with grilled trout with almonds, carpaccio of beef or a chunk of Beaufort cheese.
