Domaine d'Escausses is to be found in the village of Sainte-Croix, near the town of Albi in Gaillac and is run by Denis Balaran, 7th generation wine maker. There are 26 hectares under vine for AOC production and the estate specialises in growing ancient, traditional local grape varieties such as Mauzac, Braucol and Lenc de l'Elh ('far from the eye') alongside parcels of Sauvignon and and Muscadelle. Award-winning 'La Vigne de l'Oubli' is a blend of 50% Sauvignon Blanc, 25% Mauzac and 25% Muscadelle, 1/3 of which is fermented in oak barrels.

A pale yellow in colour. Very aromatic and floral nose of exotic fruits, passion fruit and sweet spices. Fresh and crisp on the palate with excellent acidity leading to a lingering and nutty finish. Denis suggests tripe Albi-style with local Lacaune ham, peas and saffron. Otherwise try with grilled mackerel fillets with capers or mussel stew with saffron and creme fraiche.
