The 30-hectare Domaine de Majas is located to the west of the Roussillion in the village of Caudies de Fenouilledes and is owned by Agnes et Alain Carrere who employed Lutte Raisonnee ('reasoned agriculture') for many years but in 2007 decided to become fully biodynamic, and to that end employed Domaine Matassa's Tom Lubbe, one of southern France's leading biodynamic wine makers. The vines are planted on clay-limestone soil at an altitude of 350-400 metres above sea level and grapes grown include Carignan, Grenache, Syrah and Cabernet Franc for the reds, and for the whites, Macabeu, Chardonnay and Rolle (aka Vermentino). The grapes are handpicked, very little sulphur is used and only natural yeasts are employed during fermentation.The Cotes de Catalane Blanc is a blend of 45% Macabeau, 45% Rolle (aka Vermentino) and 10% Carignan Blanc from 35 year old vines and pairs particularly well with garlicky fish dishes.
A pale golden in colour. Aromas of white flowers and green fruits with a hint of aniseed. Dry and fresh on the palate with concentrated stone-fruit and citrus flavours. The finish is concentrated and lingering. A classic accompaniment to 'anchoiade' - a paste made with anchovies, garlic, herbs and olive oil and usually spread on toast. Also try with a flash-roasted garlicky calamari salad or grilled sea bass served with fresh thyme and garlic.
