Domaine de la Chevalerie is owned and run by Danielle and Pierre Caslot. The 33-hectare organic estate is based in Bourgueil and has been in the Caslot family since 1640 and an excellent range of reds are produced from their cellar in the village of Restigne. The wines are made only from the Cabernet Franc grape, producing fresh yet intense reds that are a delight to drink. Franco de Porc is 100% Cabernet Franc harvested from 25 year old vines and undergoes ageing in old oak barrels for up to 12 months before bottling. It has excellent acidity making it an ideal food wine.
A bright ruby in colour, this is a lively and aromatic red with aromas of redcurrants and raspberries. The palate is packed with juicy red fruit flavours with hints of bitter cherry. A crisp, fresh finish lends itself well to a good goat's cheese. Try also with tuna loin with onions, noisettes of pork with prunes or artichokes stuffed with ham, mushrooms and herbs.
