Three generations of Fadats have farmed the 18 hectare Domaine Aupilhac, based in the village of Montpeyroux, across the river Hérault from the fabled Mas de Daumas Gassac. While the Fadats have farmed this land since the nineteenth century, it was not until 1989 that current patron Sylvain Fadat finally registered the domaine as a vigneron indépendant. The Aupilhac parcel sits at an altitude of almost 1200 feet above sea level on terraced land with southwest sun exposure. The soils are rich in prehistoric oyster fossils, which lend an extra minerality to the wines. As a result, his wines achieve a terrific balance of ripe fruit, silky tannins, power and grace. When aged, these wines achieve a rare complexity, while their wildness and intensity makes them equally appealing when young. The AOC Montpeyroux is a blend of 30% Mourvèdre, 30% Carignan, 25% Syrah, 10% Grenache, 5% Cinsault and is aged in oak barrels for 20 months.

A dark, opaque ruby in colour. Aromas of red berries and morello cherry with notes of lavendar. On the palate, full-bodied, rich and silky with impressive depth and power without excessive weight. The finish is sweet and gently tannic. A beautifully balanced wine. Try with paupiettes of veal with smoked bacon and capers, lamb stew a l'Avignonnaise with wild herbs, orange peel and salt pork or braised duck with turnips.
