The domaine was founded by Daniel in 1973 and is situated in the village of Arsures, 5km from Arbois itself. There are 9 hectares of vines in total - all tended according to the semi-organic method of 'lutte raisonée' - and the soil is composed mainly of clay, marl and gravel - perfectly suited to the cultivation of the Trousseau grape of which Daniel is a specialist. Today, Daniel is assisted by his son, Philippe, who produced his first vintage in 2003. This particular Vin Jaune is made from late harvest Savagnin grapes and is aged by law for 6 years on ullage in oak barrels. The wine undergoes a process similar to sherry, whereby a film of yeast (voile) covers the surface, thereby preventing oxidation but allowing evaporation and subsequent concentration of the wine. The result is a sherry-like wine with a delicate nutty richness. The wine is bottled in 62cl bottles (known as clavelins) as after its allotted time in barrel, only 62% of the original wine remains. Best served at room temperature and it is advisable to let the wine 'breathe' for several hours.

A deep golden in the glass. A beautifully concentrated nose of almonds, dried fruit, ginger and characteristic hints of 'curry'. Bone-dry and intense on the palate with notes of pear and walnut. The finish is long and rich. Perfect with a plate of Comte cheese and walnuts. Otherwise try with smoked haddock marinated in cider or chicken with morels in a creamy Vin Jaune sauce.
