Domaine Balthazar was established in 1931 by Casimir Balthazar. Today the estate is run by Casimir's grandson, Franck, who took over in 2002. The cave is located in the heart of Cornas itself, next to the church although the 3.5 hectares of Syrah vines are situated in the hills surrounding the village and are divided into 3 parcels: 'Mazards', 'Legre' and the fabled 'Chaillot' - the finest climat in Cornas. Franck converted to organic cultivation in 2010 and works alone except at harvest time. Fermentation occurs in concrete tanks and ageing takes place in very old 600 litre oak casks. 'Sans Soufre', as the name suggests, contains no added sulphites at the time of bottling and comes from young Syrah vines grown in the Legre. It is aged in demi-muids for 18 months and is bottled without fining or filtering.
A light ruby in the glass. A nose of exotic spices, summer red fruits and cherry. On the palate, light and juicy with notes of violets and cracked pepper leading to an aromatic and flortal finish. Lovely food wine with braised duck with olives, calf's liver in red wine and tomato sauce or a chunk of Saint-Marcellin cheese.
