COS was started in 1980 and is so called due to the initials of the surnames of the 3 founders - Giambattista Cilia, Giusto Occhipinti and Pinuccia Strano. The estate is based in the town of Vittoria in the Ragusa province of south east Sicily and was originally begun on a shoestring budget. Today, however, COS produces some of the finest wines on the island from native grape varieties such as Frappato, Nera d'Avola, Grecanico and Inzolia. The Pithos Bianco is made from 100% Grecanico grapes from 20 year-old vines and is floral with a lingering finish. Pairs particularly well with chicken.
A pale yellow in colour. Aromas of apricots, melon and lime. On the palate, mineral and fresh with a resinous quality. Medium-bodied with balanced acidity. Further tropical fruit flavours lead to a persistent finish. Try with chicken served with black olives and raisins, roasted rabbit served with a salsa of toasted almonds, pine nuts and anchovies or pan-fried squid with lemons and pangrattato, a crispy topping of chilli, breadcrumbs and garlic.
