COS was started in 1980 and is so called due to the initials of the surnames of the 3 founders - Giambattista Cilia, Giusto Occhipinti and Pinuccia Strano. The estate is based in the town of Vittoria in the Ragusa province of south east Sicily and was originally begun on a shoestring budget. Today, however, COS produces some of the finest wines on the island from native grape varieties such as Frappato, Nera d'Avola, Grecanico and Inzolia. The Cerasuolo is a blend of 40% Frappato and 60% Nero d'Avola from 20 year-old vines. The Frappato is aged in tank, the Nero d'Avola in oak casks making this a medium-bodied red with balanced tannins.
A vivd ruby-red in colour. Scents of cassis, plums and blueberries. In the mouth, crisp and pleasantly tannic with further elegant red fruit flavours and subtle hints of tobacco and vanilla. The finish is lingering. Try with roast pork tenderloin stuffed with garlic, fresh herbs and raisins, chicken breasts served with tomato sauce, artichokes and feta cheese or a classic Sicilian pizza topped with a black olive tapenade, sardines and provolone cheese.
