The Domaine is located in the northernmost region of Chablis, almost bordering the Champagne region and is operated by by the Gautheron family. Currently the winery is run by 5th generation wine maker Alain Gautheron assisted by his son Cyril. Between them they cultivate almost 30 hectares of Chardonnay vines grown on calcareous and marl soils situated on east facing slopes. Their vines are spread over 19 plots in some of the best municipalities in the region and lutte raisonee (semi-organic agriculture) is employed. The 1er Cru Les Fourneaux comes from the afore-mentioned slopes situated near the village of Fleys and the vineyard is named for its warm mesoclimate (fourneaux means "furnace" in French). In consequence the Chardonnay produced here is ripe and aromatic with an intense minerality. Aged in old oak casks for 12 months, this makes for a great food wine.

A bright straw-yellow in the glass with green hues. Aromas of golden apples, coconut and lime. On the palate, creamy and lively with a pronounced minerality and balanced acidity. The finish is lingering and fresh. Try with grilled oysters with lemon and parsley, rabbit in mustard sauce or a roasted vegetable terrine.
