 The various estates that make up Chateaux Ollieux Romanis are situated in the village of Monseret in the heart on the Boutenac region of Corbieres (also famed for its local honey) and have been owned and run by the Bories family since the 19th Century. The chateau named after the local olive trees planted by Romans while the cellars date back to 1896 and are hewn from the estate's quarry. Jacqueline Bories has recently handed the reins to son Pierre who oversees the winemaking and is gradually converting the 130 hectare estate to organics. 'Atal Sia' ('Let it Be') is from the sought-after Boutenac AOC of the Corbieres and is a blend of 50% Carignan, 23% Mourvédre, 23% Grenache and 4% Syrah from old vines. Although unoaked, this is a hearty red to pair with rich stews or flavoursome roasts.

A dark crimson in the glass. Smoky aromas of figs, liquorice, cocoa with a touch of mocha. Medium-bodied and complex on the palate with good acidity leading to a harmonious finish suggesting further black fruit flavours. Great with a baron (double sirloin) of lamb with herbs de Provence, braised goose with chestnut and sausage stuffing or couscous with chick peas, fennel and lemon.
