Chateau Plaisance is to be found at Vacquiers on the left bank of the Tarn river in the Cotes du Frontonnais and is run along organic lines by father and son team Louis and Marc Penavayre who have seen their holdings grow from 7 to 16 hectares since they began bottling their own wines in 1985 from vineyards situated at the highest point of the Tarn. The Cuvee Classique is a blend of predominantly Negrette (75%), Syrah (20%) and a little Cabernet Franc (5%) from vineyards situated on the highest terrace of the Tarn at 200 metres above sea level and grown on stony, alluvial soils. The grapes are vinified separately and only native wild yeasts are used during fermentation. The resulting wine is aged for 18 months before bottling.

An inky-purple in colour. Aromas of figs and dried red berries. Spicy and warm on the palate with notes of dried fruits, tobacco and raspberry. The finish is lingering and elegant. A very well balanced wine that would pair well with rack of lamb en croute, rib of beef served with a shallot and red wine sauce or roast partridge with a wild mushroom ragout.
