The 25-hectare Tenuta Cavallotto was founded in 1928 and is situated on the edge of the town of Castiglione Falletto in the heart of Barolo and on the crest of the famed Bricco Boschis hill. The estate has been in the hands of the Cavallotto family for five generations and today is managed by Laura, Giuseppe and Alfio Cavallotto and everything is carried out according to organic principles. Of the 25 hectares, just over half is given over to the old Nebbiolo vines for the production of the estate's fabled Barolos. This 100% Dolcetto comes from the Vigna Scot vineyard and is aged in large Slavonian oak barrels for 6 months before bottling.
A vibrant cherry-red in color. Aromas of red plums, autumn berries and sweet spices. On the palate, dry, fresh and pleasanttly tart with balanced tannins and medium acidity. The finish is short with further mineral notes. Great with a chicken tagine, braised pork ragu or anchovies with basil and garlic sauce.
