The late Stefano Bellotti inherited just 1 hectare of vines from his parents in 1977 at the age of 18, and immediately began farming organically. Considered to be the godfather of Italian natural winemaking, Stefano began farming biodynamically in 1984, by which time he had increased the estate's holdings in the Gavi region of Piemonte to 33 hectares, of which 22 are laid to vine. As you would expect, the grapes are hand-harvested, yields are very low and only naturally occurring yeasts are employed. This juicy white is 100% Cortese and is aged for a short period in acacia wooden barrels. No sulphites are used in the bottling process.
A straw-yellow in colour. Scents of ripe pears and apples. On the palate, fresh and juicy with a mineral texture The finish is lingering suggesting further green fruit notes. Try with roasted peppers with a salsa verde, Bagna Cauda (a warm anchovy and garlic dip served with fresh vegetables) or veal with tuna sauce and capers.
