Casa Coste Piane is small estate (a mere 5 hectares, only 30,000 bottles made) situated in Santa Stefano in the heart of the Valdobbiadene area and is run by Loris Follador and his family. For generations their wine was sold in bulk but in 1983 the decision was made to bottle the production themselves. The vineyards lie on slopes close to the cellar and the average age of the vines is 60 years. This organic Prosecco is an absolute gem, it is one of the very few made in the Champenoise method whereby secondary fermentation takes place in the bottle. However, the process of 'disgorgement' is not practised therefore the yeasts are still present in the bottle - any haziness is entirely natural.
This fine Prosecco is clean, pure and elegant, mineral with crackling citrus notes, easy-drinking yet complex. Try with chicken Chow Mein, Thai Green Curry or a lemon tart.
