Casa Belfi is situated at San Polo di Piave in the Province of Treviso, just 40 miles north of Venice and the Adriatic Sea. The current owner is Albino Armani - whose family have been making wine at the estate since 1607 - assisted by wine maker Maurizio Donadi. Everything is strictly organic: the grapes are hand harvested, only indigenous yeasts are used and vinification is carried out according to the biodynamic calendar. The extraordinary Colfondo is made from 100% Glera grapes and fermentation takes place in a combination of stainless steel tanks and wooden vats. The wine is left outside over winter in very low temperatures to stabilise and the resulting wine is bottled without being filtered. This complex yet approachable Prosecco is a great match for seafood or pasta dishes.

A lively straw yellow in colour with an excellent mousse. On the nose, hints of pears, apples and candied lemon. Medium-bodied and lively on the palate. The residual yeast present in the bottle gives up a soft and balanced acidity. A Prosecco of great personality that would pair excellently with seared scallops, smoked eel or a slice of Italian Panettone.
