The estate is situated in Radda in Chianti and has been run by Paolo Cianferoni and his family since 1982 when they bought the vineyard from Paolo's father, Reginadlo Cianferoni who originally founded the estate in 1965. There are roughly 18 hectares in total and many of the vineyards underwent extensive restoration in 1999. Everything is strictly organic on the farm and Carpasa's wines are much sought after as they are handmade and the local soils produce wines that have an unmistakably pronounced acidity, meaning that they age well. The Vin Santo is a blend of 47% Malvasia Bianca, 47% Trebbiano and 6% Malvasia Nera and is matured in small oak barrels ('caratelli') for 6 years. It is neither filtered nor fined. 

A deep golden-tawny in colour. Concentrated aromas of dried fruit, candied apricot and orange peel. Rich and intensely sweet on the palate with further notes of fig and dried apricot. The sweetness is balanced by a fresh acidity and the finish is lingering and spicy. Great with duck liver pate, pumpkin pie, or cantucci, the traditional biscotti of Tuscany.
