The Caleo wines are made by the highly respected Casa Vinicola Botter cooperative, situated at Fossalta di Piave in southwest Sicily. This 100% Inzolia (Sicily's indigenous white grape) is fermented at low temperature in stainless steel tanks thereby ensuring a crisp and fresh white wine that pairs particularly well with seafood.
A pale straw-yellow in colour. On the nose aromas of citrus, orange flower and sweet spices. The palate is firm and rounded with flavours of melon and green apples leading to a snappy acidity. A crisp and nutty finish makes this a great food wine with skate wing served with Zogghiu, a sauce of blitzed parsley, mint, balsamic vinegar and capers, sardines stuffed with breadcrumbs, pine nuts, lemon and passolina (a Sicilian green herb) or Bellini's masterpiece, Pasta Alla Norma with aubergine, tomato and salted ricotta.
