The 1701 winery is situated at the 18th century Villa Palazzo Cazzago in the town of Santa Giulia in Lombardy. The name refers to the date of the first vinification of the estate's 'Brolo' vineyard - a sun-drenched 4 hectare parcel of vines framed by 11th century walls. Currently there are 15 hectares of vines, all farmed biodynamically. The grapes are hand-harvested and no chemicals or sulphur is used in the wine making process. Sullerba is 100% Chardonnay and the first fermentation is carried out with ambient yeasts in clay amphorae for 9 months in advance of the secondary fermentation which occurs in bottle. It is then rested for 12 months before release.

A straw-yellow in colour with hints of green and a fine bubble formation. Aromas of pineapple, grapefruit zest and lime. On the palate, zesty with a well balanced acidity leading to a refreshing finish. Altogether a very approachable sparkler. Try with spaghetti with clams, spinach and taleggio flan or penne pasta with a creamy aubergine sauce and ricotta salad.
