The Bodegas was founded in 1887 and is currently run by 5th generation sherry maker, Cesar Florido. The winery is the oldest in the town of Chipiona, near Sanlúcar and Cesar Florido is one of the few remaining Almacenistas still to reside oceanside in Chipiona. This means he buys grapes not the must to create the sherry. The Palomino grapes for this bone-dry Fino come from 20 year old vines grown in the classic albariza soils of the "Miraflores" vineyard. The wine is aged all year round under a "flor", or veil of yeast that gives the Finos their uniquely fresh and salty character. This makes for a brilliant aperitif.

A clear pale golden in colour. Look for scents of toated almonds and camomile. On the palate, bright with a lively acidity leading to flavours of green apple and sage with mildly salty notes. A vigorous and fresh wine that makes for a great accompaniment to seafood. Serve well chilled with prawns a la Plancha, grilled mackerel with a sage sauce or spaghetti with anchovy and oregano sauce.
