The Vinum vineyards are composed of selected sites in the Stellenbosch region, from prime parcels on the Helderberg Mountain and in Devon Valley. These sites offer excellent mineral soils, Southerly exposures and healthy, mature vines, all of which combine with the cool maritime breezes to bestow on these vineyards the ideal environment for excellent grape development. Here Cabernet is king and Vinum have exploited the superb conditions to produce one of the finest examples of the grape in the region, and one that also represents great value for money. In this particular case, two-thirds of the wine undergoes fermentation in barrel, the rest in tank. The tank-fermented wine is then transferred to small French oak barrels for 18 months before bottling.
A deep ruby-red in the glass. A rich and spicy nose of blueberry, cigar box and sweet spices. On the palate, well structured and balanced with a restrained minerality and medium body. Look for flavours of cassis and black cherry. The finish is lingering with further delicate spice. Try with porcini herb crusted rack of lamb, spicy sausages with a mustard mash and red onion gravy or a chunk of Wensleydale cheese.
