The 20 hectare Domaine Champalou is situated in Vouvray itself in the Touraine region of the Loire Valley and is run by the dynamic Catherine Champalou. The family has been at the estate for nearly 20 years and during that time their wines have gained an excellent reputation for their rounded, almost buttery Chenin Blancs. This particular sparkling Chenin Blanc is made in the Methode Traditionelle; once alcoholic fermentation has taken place the wine is left over winter on the lees. In the following spring it is bottled with a dose of unfermented grape juice which produces the 2nd fermentation. The wine is then left in the bottle for a minimum of 12 months before release.
A pale straw in colour with excellent bubble formation. Floral and aromatic on the nose with notes of peach, melon and sweet hay. The palate is honeyed and round with excellent acidity and a long finish. Try with a seafood risotto, Gateau de Pithiviers (feuillette with almond filling), or a simple bowl of strawberries.
