Fattoria de Vaira is a large biodynamic farm situated near Molise's capital, Campobasso. There are 500 hectares in all, of which 40 are planted to vines, the rest devoted to vegetables, grains and olive oil. Grape varieties include Falanghina, Trebbiano, Montepulciano, Sangiovese and Merlot, all grown on south facing clay soils just a few hundred metres from the Adriatic coast. The farm uses green manure and cover crops and compost from their own herd of cattle. All the grapes are hand-harvested, no chemicals are employed in the vineyards and only native yeasts are used. Sulphur is kept to an absolute minimum. Vincenzo Bianco is a blend of Falanghina and Trebbiano and fermentation takes pace in stainless steel tanks with no fining or filtration. This refreshing white is packed with orhcard fruit flavours and makes for a great aperitif.
Deep golden & slightly cloudy in the glass. Aromas of pears, ripe apples and stewed plum. Full and herbaceous on the palate with notes of elderflower leading to a refreshing finish. The tannins are perfectly balanced by the forward acidity. Great with a pear and walnut salad, hake chowder or a Caprese salad with shrimp and asparagus.
