Chateau Hermitage Saint-Martin is situated at La Londe, 10 miles east of Toulon in the AOC Côtes-de-Provence and is run by young winemaker Guillaume Enzo Fayard who bought the then Chateau Saint-Martin la Toche in 1999 and renamed it Hermitage Saint-Martin. Although there are nearly 30 hectares in total, only 10 are currently planted with vines, mainly Mourvedre and Grenache with the addition of some Cabernet Sauvignon, Cinsault and Rolle (aka Vermentino). The vineyards are farmed organically and enjoy a superb south-east facing aspect overlooking the Cuers valley. The soils consist of sandstone and clay, very similar to the soils of Bandol. A range of reds, whites and roses are made on the estate and the 'Grande Cuvee Enzo' is a blend of hand-harvested Grenache, Mourvedre and Cinsault. Only 17,000 bottles are made so availability is therefore limited.

A pale coral and salmon in colour. On the nose, delicate, mineral aromas of summer red berries, citrus fruits and rose petal. Dry and refreshing on the palate with further red fruit notes and citrus flavours backed up by a mineral backbone. The finish is crisp and light. Superb food wine. Try with red snapper fillets en papillote, a roasted vegetable and feta tart or chargrilled scallops served with fennel, peppers and tomatoes.
