Chateau Plaisance is to be found at Vacquiers on the left bank of the Tarn river in the Cotes du Frontonnais. The estate is run along organic lines by father and son team Louis and Marc Penavayre who have seen their holdings grow from 7 to 16 hectares since they began bottling their own wines in 1985 from vineyards situated at the highest point of the Tarn. 'Tot Co Que Cal' is a blend of 50% Negrette, 40% Syrah and 10% Cabernet Sauvignon from very low yields (30hl/ha) and spends 18 months in new oak barrels. Neither filtered nor fined, only 2,000 bottles were made and stocks are necessarily limited.

A dark inky purple in colour. Aromas of cassis and sweet spices with new oak nuances. On the palate, dense and full-bodied with ripe black fruit flavours and powerful yet refined tannins. The finish is spicy and concentrated. Hearty stews and roasts required here! Try with marinated wild boar with chestnuts, entrecote steak with beef marrow or Garbure - a local stew of cabbage, turnips, salt pork and duck confit.
