The house was founded in 1984 by the Huguenot family and is based in the village of Celles-sur-Ource in the Cote-des-Bar, a region well known for its Pinot Noir. Today the 7-hectare estate is run by brother and sister, Adeline and Edouard Huguenot-Tassin. All is organic and the grapes are hand harvested. Signature is 100% Pinot Noir and is fermented in a combination of vat and barrel. The juice spends up to 36 months on the lees and the dosage is relatively low at 10gm/litre.
A bright straw-yellow in colour with a delicate mousse. On the nose, notes of citrus, yeast and almonds. On the palate, fresh and dry with a chalky minerality and flinty acidity. The finish is clean. Try with buuternut squash ravioli, vegetarian spring rolls or fried chicken
