The house was founded in 1984 by the Huguenot family and is based in the village of Celles-sur-Ource in the Cote-des-Bar, a region well known for its Pinot Noir. Today the 7-hectare estate is run by brother and sister, Adeline and Edouard Huguenot-Tassin. All is organic and the grapes are hand harvested. Fioles Rosees is a blend of 95% Pinot Noir and 5% Chardonnay. Maceration is short at 12 hours and the dosage of 12g/l makes this a very approachable fizz which works well as an aperitif.
A raspberry pink in colour with fine, delicate bubbles. On the nose, aromas of redcurrants, rose petals and pepper. On the palate, clean and dry with a creamy effervescence and forward acidity leading to a fresh and lingering finish. Great with smoked salmon, oysters or grilled lobster.
